🔧 How To Season Your Cast Iron Wok — MUST READ BEFORE USE

⚠️ This wok has NO pre-heat and NO coating. Seasoning is MANDATORY. Follow these steps carefully:

STEP 01
🧼 Wash the Wok
Wash with warm soapy water and a soft sponge to remove any factory dust. Rinse thoroughly and dry completely with a towel.
STEP 02
🔥 Heat the Wok
Place on medium-high heat for 3-5 minutes until completely dry. Rotate the wok to heat all sides evenly. This opens the iron pores.
STEP 03
🛢️ Apply Oil
Turn heat to medium-low. Add 1-2 tbsp of high smoke point oil (vegetable, canola, grapeseed — NOT olive oil). Spread oil using paper towel held with tongs.
STEP 04
♨️ Heat & Smoke
Increase heat to medium-high until oil begins to smoke (3-5 minutes). Wipe away excess oil. The wok will darken. Open windows for ventilation.
STEP 05
🔄 Repeat 2-3 Times
Let wok cool slightly, then repeat steps 3-4 two or three times. Each layer builds a stronger non-stick coating.
STEP 06
🍳 Ready to Cook
Your wok is now ready! After each use, clean without soap, dry completely on heat, and apply a thin coat of oil.

✅ Properly seasoned cast iron wok = Natural non-stick surface that lasts a lifetime!

🏠 Alternative Oven Method (Recommended for Cast Iron): Preheat oven to 230°C (450°F). Apply thin layer of oil to entire wok (inside and out). Place upside down on middle rack with foil below to catch drips. Bake for 1 hour, then let cool in oven. Repeat 2-3 times for best results. For 50cm+ woks, oven may be too small — use stovetop method.

🧼 Care Instructions — Keep Your Wok For Life

✅ DO — Daily Care
Dry immediately after washing — heat on stove to ensure 100% dry. Apply a thin coat of oil after each use. Use hot water and a soft brush/sponge. For stuck food, use coarse salt and a paper towel.
❌ DON'T — Avoid These
Do NOT use dishwasher — will cause severe rust. Do NOT soak in water — iron will rust within hours. Do NOT use steel wool or metal scrubbers — scratches the seasoning layer. Avoid soap if possible.
👂 Double Ear Handle Care
The ear handles are cast iron — they will get hot during cooking. Use towels or gloves when lifting. Handles do not require special maintenance.
🔄 Rust Happened? Fix It
Scrub with steel wool and warm soapy water until rust is gone. Rinse, dry completely, and re-season immediately (follow steps above). The wok will be good as new!

🏪 Commercial Size Notes — 45cm to 65cm

50cm — The Commercial Standard
50cm is the most popular size for restaurants and food stalls. Perfect balance of capacity and manageability. Fits standard commercial wok burners.
55-60cm — High Volume
For high-volume restaurants, banquet kitchens, and event catering. Requires powerful wok burner (at least 150,000 BTU recommended).
65cm — Festival / Mass Production
Heavy-duty commercial use. For festivals, large events, and mass food production. Requires industrial wok burner and experienced handling.
Seasoning Large Woks
For 50cm+ woks, stovetop seasoning is recommended (oven may be too small). The process is the same — just more oil and longer heating time.

❓ Frequently Asked Questions

Q: What's the difference between double ear and single handle?
A: Double ear handles provide balanced lifting — essential for larger woks (45cm+) and commercial use. Single handle is better for tossing stir-fry.
Q: Which size should I buy for home use?
A: 36-40cm for most home kitchens. 36cm for 2-3 people, 38cm for 3-4 people, 40cm for 4-5 people. 42cm is good for large families.
Q: Which size do restaurants use?
A: 50cm is the standard commercial size for most restaurants. 55-60cm for high volume. 45cm for small restaurants/food stalls.
Q: Can I use this on an induction stove?
A: Yes, cast iron works perfectly on induction. For larger sizes (50cm+), ensure your induction hob is large enough.
Q: Does this wok come with a lid?
A: No, lid is not included. Traditional wok cooking typically does not use a lid, especially for stir-fry.
Q: Which oil is best for seasoning large woks?
A: Flaxseed oil creates the hardest seasoning. For commercial woks, vegetable or canola oil is more economical and works well.

Double Ear Cast Iron Wok — Complete Guide

Cast Iron Construction: Cast iron is an iron-carbon alloy with high carbon content (2-4%). It is poured into a mould while molten, resulting in a thick, heavy wok with excellent heat retention. The thickness (typically 3-5mm) provides superior temperature stability — once hot, cast iron stays hot for a long time. This makes it perfect for braising, deep frying, and large-batch cooking where consistent temperature is critical.

Double Ear Handles: Unlike single-handle woks designed for tossing, the double ear design provides balanced, two-handed lifting. This is especially important for larger woks (45cm+) that are too heavy for one-handed use. The ear handles are integrated into the cast iron body — they will get hot during cooking, so always use towels or heat-resistant gloves when lifting.

Natural Raw Finish — No Pre-Heat: This wok has a natural raw cast iron finish with no pre-heat treatment. Unlike blue woks that have been heat-treated, this wok is in its pure raw state. This means seasoning is especially important — the raw iron will rust quickly if not properly seasoned and maintained. However, the raw surface also means you have complete control over building your own seasoning layer from scratch.

Size Selection Guide: Choose 36-40cm for home kitchens (2-5 people). Choose 42-45cm for large families or entry commercial. Choose 50cm for standard restaurant use — this is the most popular commercial size. Choose 55-60cm for high-volume catering. Choose 65cm for festival cooking and mass production. No lid included. Seasoning required before first use.
